Living Flour
There's nothing like fresh, stone milled flour! We mill to order for our bakes to achieve the most flavorful and nutritious flour possible. The beauty of stone milling is that the entire berry: endosperm, germ, and bran is processed through the stones - producing a flour that is alive and bursting with nutrition and flavor.
Astrié Stone Mill
A unique style of stone mill, ours has flat lands as opposed to a 'dressed' or roughened surface. The grooves burst the berry as the stone rotates and then the large bran flakes are scraped clean of their innermost layers. The outer bran is sifted out leaving the best of the berry. Depending on the screen used we'll retain 75-85% of the berry, a 'High Extraction' flour.
